Chocolate Marquise
Yield: 9” x 13” dish
Ingredients:
9 oz Heavy Cream
15 oz Butter
1 ¼ c Egg Yolks
1 ¾ c Dark Chocolate
Instructions:
Boil heavy cream and butter, then slowly add to egg yolks while whisking. Return mixture to medium heat, whisking constantly until it coats the back of your spoon (nape). Pour the mixture onto the Dark Chocolate in a separate bowl, and blend thoroughly. Pour into a parchment-lined and sprayed dish, or individual dishes if preferred. Allow to set overnight. Use a hot knife to cut cleanly.
Served with raspberry sauce.
